Moroccan Chicken Tagine with Preserved Lemon

A slow-braised Moroccan chicken dish scented with preserved lemon, olives and warm spices.

The Story Behind Moroccan Chicken Tagine

Tagine refers both to a North African cooking vessel and to dishes prepared by slow, moist cooking. In Morocco, tagines combine meat, vegetables, fruits, olives, spices and preserved ingredients in countless regional combinations.

Chicken with preserved lemon and olives is among the best-known Moroccan versions. Preserved lemon contributes a salty, floral citrus flavor that is very different from fresh lemon juice.

Origins and Culinary Context

Slow cooking allows spices and aromatics to penetrate the meat while producing a concentrated sauce. Although the conical tagine pot is traditional, a heavy covered casserole can produce excellent results.

Why This Dish Matters

Families vary the spice blend, herbs, olive type and amount of preserved lemon. Some add saffron or smen. This version keeps the ingredient list approachable.

Regional Variations and Modern Cooking

The dish reflects the layered flavor logic of Moroccan cooking: spice, acidity, salt, aromatics and slow-cooked richness are carefully balanced.
